Once again Employee Wellness with Registered Dietitians and Nutrition Services are pulling out all the stops to teach you new and healthy ways to perk up your palate and cheer up your cuisine. If the Great Grains Expo amazed you last year... Wait 'til you see the Big Beautiful Bean Expo this year!

Beans! Beans Beans! 21 varieties were displayed at the Big Beautiful Bean Expo.

They are high in protein and fiber, some are high in iron, magnesium, folate and tryptophen. They are low in fat and can help keep your cholesterol level healthy. The variety of colors and flavors can add zest and interest to your diet.

And they are cheap!

Participants tasted black turtle, kidney, garbanzo, chili, navy, pinto, soy , French lentils, red dhal, and mung bean sprouts, Participants received samples of French lentil beans to sprout for salads and sandwiches and a cookbook of recipes for the featured beans.

Mark your calendar for next years national nutrition month when the Great Greens Expo will be held.

  • Come and taste several varieties, learn new ways to incorporate them in your diet.
  • See ways besides soup to serve them or purchase them ready made, pick up a sample to sprout.
